Pumpkin Pie Oatmeal

I got in the mood to make something very fall! I had a hunch that the cans of pumpkin puree I had left over from Thanksgiving were going to save the day. As usual I was looking for a healthy alternative to a Holiday food, and stumbled across the idea of Pumpkin Pie Oatmeal. I brought it to work all last week for lunch, and it was a delicious post workout meal. Hope you enjoy!  

Ingredients:

  • 1 cup dry oats
  • 3/4 cup canned pumpkin purée
  • 1/4 cup brown sugar
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup chopped toasted pecans

Make the oatmeal according to the instructions, when the oatmeal is almost done add all the ingredients above and let simmer for ten minutes.
